Soused herring fillet with larded new potatoes in house wives’ sauce
For 4 persons
Soused herring fillets 8
New potatoes 800 g
Ham (3 slices) 120 g
Red onion 1
Mayonnaise 4 tbsp
Yoghurt 2 tbsp
Salt, Pepper, Sugar, Parsley
For the larded potatoes, halve the new potatoes and boil in their skins. Wrap in ham and fry in the pan.
For the housewives’ sauce, cut the apples, red onions and gherkins into strips and mix with the mayonnaise, yoghurt and a dash of gherkin juice. Season with a pinch of salt, sugar and pepper to taste. Garnish with parsley.
